Big steaming pots sit and hiss, and each time a lid lifts, white steam rushes up into your face. The first spray feels like lifting the lid off a pot of corn in winter, warm, wet steam carrying the smell of sweet corn, soaked grain, and hot cooking water. Steamed air and sweet corn silk open the composition, soft, humid, and almost foggy.
