Jordi Roca i Fontané (Girona, 1978) is the youngest of the Roca brothers and the pastry chef at the restaurant. His amazing proposals are a sensory experience that combines skill, irreverence, fascination and fun. His technical skills, creative processes and boldness are at the core of countless desserts but, more importantly, he has set trends that have been successfully incorporated in the cuisine of El Celler de Can Roca, voted the #2 restaurant in the world.
Some of Jordi Roca’s most outstanding dishes draw their inspiration from the world of fragrances. Now, however, the process works the other way round: a dish inspired by the tenderness and spontaneity of childhood, the Lemon cloud, has evolved into a fragrance.
With the co-operation of perfumer Agustí Vidal, Jordi has captured the essence of the dish, a “lemon muffin soaked in milk”, and has successfully encapsulated its flavour in a bottle of fragrance. NÚVOL DE LLIMONA (Lemon Cloud) draws its inspiration from a dessert: an all-pervading, ethereal cloud of lemon surrounding a sponge cake treated to milk and sweeties.
